I often find myself wanting a little something nice, a treat as we would say. Too often I was turning to biscuits, chocolate and other junk foods. I also have some early starts in the morning and can’t face breakfast but would be hungry a few hours later. This is when I decided to go searching the big wide web to see if I could find foods to solve this problem.
Now I am sure you’re all aware that there is lots of advice out there on foods to avoid and also so called super foods, all very confusing. We see add after add and different professionals and others telling us what foods are best to have and of course we have all heard Dr. Ava on about the overload of sugar in our diet which has left many of us paranoid.
So I was delighted when I came across a post on energy balls. Of course I did what I always do, changed it up to suit myself and added more good bits and removed other parts. These power balls or simply Peanut butter balls are packed with goodness and taste yummy. They have very little sugar, low in fat, have a trace of salt and are full of protein. I can have one in the morning with my green tea and even have one later as a treat and not feel guilty. I think they would be perfect for any mum up feeding at night (breast or bottle) or any time for a wee boost. Maybe you could make them for a friend with a young baby. Here is my recipe.

  • 1 cup of oats
  • 2 tablespoons of Chia seeds
  • 1 tablespoon linseed
  • 1 tablespoon flaxseed
  • 1/2 cup smooth peanut butter
  • 1/3 cup honey
  • 1 tbl spoon Vanilla extract

If you are desperate for a little chocolate you can add a few choc chips or shavings. (If using a big mug up your linseed and flaxseed)

Place all ingredients in a bowl and mix well. Place in the fridge for about an hour then remove and roll into balls about the size of a ping pong ball or golf ball. I put mine in paper cases and then place in the fridge to be enjoyed when needed. Let me know how you get on.
